A Quick Green Soup for a Healthy Winter

Indeed Green is the color of Spring and the Wood element. What if we adopted some liveliness to grey winter and zest it up with some ginger & garlic. We move the Qi and stregthen our immune system. By the way, any additional greens are welcome!
What's in it?
2 leeks (white part only), sliced
4 zucchini or courgettes, diced
1 tablespoon fresh ginger, grated
2 cloves garlic, crushed
1 teaspoon salt
1/2 teaspoon ground black pepper
2 tablespoons olive oil
4 cups water
1/2 cup dill, chopped
To serve:
1 tablespoon natural yogurt per plate, a little chopped chives and a little crushed chili
How to prepare?
1. Heat olive oil in a large saucepan over medium heat.
2. Add the leeks and zucchini and sauté for about 5 minutes, until they soften slightly.
3. Add the ginger and garlic and continue sautéing for another minute.
4. Season with salt and pepper, and add the water. Bring to a boil, reduce heat and simmer for 10-15 minutes.
5. Blend the soup with a stick blender until smooth.
6. Add the chopped dill, stir and cook for another 5 minutes.
7. Pour the soup into serving bowls.
Add a spoonful of yogurt to each serving, sprinkle chopped chives and crushed chili on top.
