Oats (not instant) are one of the most balanced breakfast grains - rich in soluble fiber (especially beta-glucans) that help stabilize blood sugar, reduce cholesterol and support heart health.

They also promote satiety and gut health while providing gentle, sustained energy for cold mornings.

In autumn and winter, combining oats with warm spices like cinnamon, citrus zest, and roasted fruits creates a naturally sweet, grounding meal that nourishes both body and spirit.

What's in it? (for 4–6 servings)

Base:

2 cups rolled oats (or a mix of oats and pearl barley)

2 tablespoons honey or maple syrup

1 ½–2 cups oats/almond/soy milk

½ cup freshly squeezed orange juice

Zest of 1 orange

1 teaspoon cinnamon

½ cup chopped walnuts or roasted chestnuts

Pinch of salt


Topping:

2 pears or apples, thinly sliced (skin on)

Juice of ½ lemon (for coating the fruit)

1 tablespoon maple syrup or honey (optional)

A few small cubes of butter (or coconut oil for vegan option)

Optional: 1 tablespoon brown sugar for sprinkling


How to?

Prepare the oat base (the night before)

1. In an ovenproof dish (like a Pyrex or ceramic tart pan), add the oats.

2. Drizzle the honey/maple over the oats and massage gently with your hands to coat them evenly.

3. Add the milk, orange juice, orange zest, cinnamon, walnuts (or chestnuts), and a pinch of salt.

4. Stir until everything is combined but not soupy-oats should absorb some liquid, still holding texture.

5. Cover and refrigerate overnight.

By morning, the mixture will be firm and slightly cake-like.


Add the fruit topping

1. In the morning, if the mixture looks dry, add a splash of milk or water to moisten slightly.

2. Slice the pears or apples and toss them gently with lemon juice and a bit of maple/honey to coat

3. Arrange the fruit slices neatly on top of the oat mixture, skin side up so the flesh sinks into the oats.

4. Dot the top with small bits of butter and, if you like, a sprinkle of brown sugar for a golden crust.


Bake

  1. Preheat the oven to 180°C (350°F).

  2. Bake for about 30–40 minutes, until the oats are set and the top is golden brown.

  3. For a crispy finish, turn on the grill/broiler for the last few minutes to gratiné the top.

  4. Serve warm as a hearty breakfast or dessert.
