Golden Tofu “Scrambled Egg” – The Perfect Vegan Breakfast

Tofu is a powerhouse of plant-based protein, rich in calcium, iron, and essential amino acids that support muscle strength and bone health. It’s also low in saturated fat and cholesterol-free, making it an ideal choice for heart-healthy meals. Soya beans (from which tofu is made) are excellent for menopausal women, for lowering cholesterol and blood sugar levels. Beyond its nutrition, tofu is incredibly versatile — it takes on flavors beautifully and can mimic the texture of eggs in this satisfying vegan “scramble.”


What's in it?

1 block firm tofu (about 300 g)

½ cup oat milk (or any plant-based milk)

1 teaspoon ground cumin

½ teaspoon turmeric (for color and flavor)

¼ teaspoon sugar (balances the cumin bitterness)

Salt to taste

Optional spices: dried oregano, dried onion flakes, black pepper

1 tablespoon olive oil

1 small carrot, finely chopped or grated

½ cup mushrooms, sliced

½ cup peas (fresh or frozen)

2–3 spring onions, chopped


How to?

Prepare the tofu base

  1. Unpack the tofu and pat it completely dry with paper towels.

  2. Grate it using a coarse grater (like for cheese).

  3. Place the grated tofu in a bowl and soak it overnight with the oat milk, cumin, sugar, salt, turmeric, and any dried herbs or spices you like.

  4. Do not drain the milk - it will be used for cooking the next day.


Prepare the vegetables

  1. In a large non-stick pan, heat olive oil

  2. Add the chopped vegetables and sauté for several minutes.

  3. Season with a bit of salt and cook until all the moisture evaporates and the vegetables become lightly golden. This step ensures your final dish stays fluffy and not watery.


Cook the tofu “eggs”

  1. Add the tofu-milk mixture to the cooked vegetables.

  2. Cook on high heat, stirring occasionally, until most of the liquid evaporates.

  3. The mixture will bubble at first (from the milk) - keep cooking until it becomes dry and fluffy, with small golden-yellow bits resembling scrambled eggs.
